So Elena and I had a date day yesterday because I’ll be honest, my attention gets sucked up by the younger two and I feel like she doesn’t ever get full attention from me. So I wanted her to have a day of just her.
We started our day by going to my ortho appointment and Elena won everyone over there with her goofyness. She is my class clown of our little group of kids. She made everyone giggle and she even got to decide what color of bands to put on, and if you know my daughter you know that i have neon pink bands now for the next month. She’s such a girl! She wanted my teeth to match her outfit. She won over my orthodontist by telling him how much she loves to brush her teeth! haha, that’s my daughter!
So after that little adventure we decided to go to nisswa for a little shopping. It was honestly one of the best date days Elena and I have had!
We ended the shopping spree by going to the local coffee house and getting some treats. Elena indulged herself with a giantic chocolate chip cookie the size of her head, and insisted that we get daddy a raspberry white chocolate scone. When we got home Mr,Craig sucked down the scone and didn’t say much about it. Till this morning..he gets up, comes out to the living room and looks at me and says, “I woke up wanting a scone this morning. Maybe we should get some recipes so you can make me more.” So being the overly obessed with recipe apps on my phone person that i am, type scones into my betty crocker app and find this wonderful recipe…which is where i was going with the title of this blog! I was given a jar of honey apple butter from my dad and step mom from Trader joe’s and i have been itching to use it in a recipe. Here’s what I made!

Apple Butter Cream Cheese Scones!!
Ingredients:
2 1/4 cups all purpose-flour
3 teaspoon baking powder
1 tablespoon packed brown sugar
1/4 cup butter or margarine, melted
2 eggs, beaten
1/2 cup whipping cream
1/4 cup apple butter
1 teaspoon butter or margarine, melted
2 teaspoons prepared cinnamon-sugar
1 package cream cheese-softened
Heat oven to 425 F. In large bowl, mix flour, baking powder, and brown sugar. Stir in 1/4 cup butter, eggs, whipping cream, cream cheese, and apple butter until soft dough forms.
On lightly floured surface, pat dough into 8-inch round, about 3/4 inch thick. Brush with 1 teaspoon butter; sprinkle with cinnamon-sugar mixture. Cut into 8 wedges. Place wedges on an ungreased cookie sheet 1 inch apart.
Bake for 10-15 minutes or until golden brown. Remove from cookie sheet and place on cooling rack.

And “holy apple butter batman” are they good! Super soft and dipped in melted butter and rolled in raw sugar and cinnamon. yuummmyyy. So we decided as a family, that Sunday is going to be our scone day. We are going to try a new recipe each sunday! I think we’ll try blue berry white chocolate next sunday. Just sounds too good to not try!
But i also wanted to show something that i got on camera…it’s a miracle..Andrew hugging Elena…yes..there was an actual hug that happened and now just once…on this night 5 hugs happened in a row. It’s purely a miracle.
